Polyurethane Flooring and VOCs?

We're considering specing a polyurethane floor in a commercial kitchen in a LEED project. Though I don't believe it's an issue specifically covered in LEED, we're concerned about the off-gassing during installation. After it's down, I've been told it's non-toxic and that, due to the fact it is non-porous, it is actually a heathier product than most as it won't harbor bacteria.

Has anyone examined this before or aware of other chemical issues regarding this flooring?
